So first off, we know how much everyone loves to eat pie over the holidays. Thanksgiving wouldn’t be complete without a slice of tasty pumpkin pie to finish the meal. There’s nothing worse than a less-than-desirable pie sitting on the table that wasn’t made juuuuuust right. So this is how to make the absolutely perfect homemade pumpkin pie crust so you don’t leave your family disappointed at the dessert table.
Tip 1) Know what you need. Aside from the perfect list of ingredients — we’re using the recipe from Once Upon A Chef — the difference between a good pie and a great pie is in the consistency of the crust. For the perfect pie crust, you need ⅛-inch thickness and a 14-inch round.
Tip 2) Prep your area. It’s time for the secret reveal! Whip out the Dough EZ and ⅛-inch guide rails.
Put the guide rails on the counter so they line up on either side of the 14-inch circle.

Tip 3) Roll the dough so it’s perfect. Trust us, it is easier than it sounds.
Put the dough ball in the middle and close the top layer on top of the dough.

This rolling system is great for at-home bakers, as well as for use in a professional bakery, restaurant, or cafeteria. The top layer of the mat makes it easy to see the dough spread underneath. Guide the edges of the dough to touch the 14-inch circle. The thickness guides keep your roller at the same height so you literally can’t roll any part of the crust too thin.

Tip 6) Cover the edges with foil. After the initial 25 minutes, remove the pie from the oven and cover the edges with foil to prevent them from burning. Put the pie crust back in the oven for another 20 minutes.
